Mathri recipe with Step by Step Photos. 
Mathri or papdi is a famous Indian snack. It is made up of minimal ingredients, very easy to prepare and can be store for a very long time. It tastes amazing with achar and even in chats! 
Here is step by step mathri recipe with photos.


Ingredients:

Maida - 2 cups
Ghee - 1 Tbsp
Chilli powder (Optional) - 1/2 Tsp
Kalaunji (Onion Seeds) - 1/4 Tsp
Ajwain (Carom seeds) - 1/4 Tsp
Salt - to taste
Oil - for deep frying

Mathri Recipe :

  1. Take maida in a big bowl.
  2. Add ghee, red chilli powder, ajwain, kalaunji and salt. Mix everything well.
  3. Now we need to check if the amount of ghee is correct. For this press some mixture in your fist. Open your fist and check it retains the shape. If it retains then you can go ahead, else you should add some more ghee.
  4. Knead a little tight dough using water.
  5. Once dough is ready, cover it with a moist cloth.
  6. Take a section of dough, slightly bigger than what we take for paranthas.
  7. Roll it a little thicker and bigger than paranthas. Prick it with a fork. 
  8. Use a cookie cutter/ bowl/ glass to cut the round shaped mathris.
  9. Heat oil in a kadhai for deep frying. Deep fry mathris on low flame.

7. Roll it a little thicker and bigger than paranthas. Prick it with a fork.

Recipe Notes:

1. Make sure that you add enough ghee in the dough. Otherwise mathris will become chewy. Holding the mixture in the fist is the best test for the amount of ghee.
2. Deep fry them on low flame. This will ensure that mathris are crispy and won't become very dark in colour.
